So last night I decided to try out this simple recipie I’ve been meaning to try out for awhile. I had heard about it from my mother after a trip she made to Arizona back in the 80’s… which also happens to be when I didn’t eat eggs. So here’s the basics.
First, the ingredients:
I used 4 eggs, 4 hot dogs, relish, and ketchup. As an afterthought, I realized I could have probably used some of those onions that you put on the hot dogs… but I wasn’t going back out to get them.
Second, the prep:
I cracked the eggs, scrambled them up, cut the hot dogs into dimes and started them browning in the pan with a little bit of butter on medium heat.
Third, the cook:
I tossed the relish in with the scrambled eggs and then poured it over the browning hot dogs. After I did this I also lowered the heat.
I stirred/flipped/tossed the eggs as you would any other scrambled eggs, and eventually after they were cook I tossed them into a bowl.
Fourth, the eat:
Added a little ketchup, and down it went. After the consumption, there’s a couple things I’d like to try different next time. First, I’d definitely get those onions because I think they would probably be amazing in this. I’d also probably pepper the eggs, and maybe add some sour cream to make them a little fluffier. I’m thinking some hot sauce instead of ketchup could kick it up, and maybe… just maybe… some sauerkraut? Maybe in place of the onions? The options for this are pretty plentiful.
Honestly it really was pretty good and not too shabby for an attempt off a 30 year-old memory of a recipie. Any other ideas to make it better?
